The 2020 Catering Report, drawn up by Fipe-Confcommercio, is a real war bulletin. In fact, there are 514 thousand fewer jobs, double compared to those created between 2013 and 2019 (245 thousand jobs).

Italians, due to restrictions and lockdowns, have changed the way they consume, preferring to do it at home, with a growth of six billion euros. On the other hand, there was a collapse for bars and restaurants, where spending fell by as much as 31 billion euros.

In 2020, the decline in turnover for companies in the sector was as much as 97.5 percent, almost total. As reported by Fipe-Format Research, 89.2 per cent of entrepreneurs believe government support is useless or ineffective. Another reason for mistrust comes from the birth of new businesses: if there were over 18,000 in 2010, today we are at 9,190, about half.

There is also distrust over the future. We are at an all-time high. According to the interviewees by Fipe-Confcommercio, in 2021 there will still be drops in turnover. In short, the reopenings will not be sufficient to recover, we will have to wait. The good news comes from digital services: in particular in food delivery there are growth prospects, so much so that many restaurateurs have opened up to the possibility of take-away food and home delivery, many through the web. If it is therefore true that online risks hurting local shops, it is equally true that it reserves many positive surprises and resources for those who have the foresight to invest in it.

Altro motivo di sfiducia arriva dalla nascita di nuove imprese: se erano oltre 18 mila nel 2010, oggi siamo a 9.190, circa la metà.

Anche sul futuro regna la sfiducia. Siamo ai massimi storici. Secondo gli intervistati da parte di Fipe-Confcommercio, nel 2021 ci saranno ancora cali di fatturato. Le riaperture non saranno insomma sufficienti per recuperare, bisognerà attendere.

Le buone notizie arrivano dai servizi digitali: in particolare nel food delivery ci sono prospettive di crescita, tanto che molti ristoratori hanno aperto alla possibilità del cibo d’asporto e della consegna a domicilio, molti attraverso il web.

Se è dunque vero che l’online rischia di fare male ai negozi di prossimità, è altrettanto vero che riserva parecchie sorprese positive e risorse per chi ha la lungimiranza di investirci.
