Who doesn’t know tiramisù?
A dessert that leaves you speechless for its goodness. There are basically two ways to prepare it, with ladyfingers or pavesini. These are biscuits that hold up very well in soaking.
Using pavesini, you need a higher dose of mascarpone, another essential ingredient to make this recipe.
Tiramisù is a spoon dessert that should be served sliced or in a glass as a cold dessert to end a lunch or dinner in the best way possible. But don’t forget that it is also very good as a snack.
Before starting with the preparation, remember to take the mascarpone and eggs out of the fridge at least 30 ‘before use, as they should be at room temperature.

We can divide the preparation of tiramisu into eight operations.
Let’s start by dividing the yolks from the whites. At this point, in a large bowl, with the electric whisk you can work the egg yolks with the sugar until the mixture is soft and fluffy.
Put the mascarpone in another bowl, working it with a wooden spoon until you get a cream without lumps.
Now add the mixture to the mascarpone, mixing everything together.
Put the egg whites in a bowl and add a little salt, beating them until stiff.
Now, with a spatula, combine the whipped whites with the already prepared mascarpone cream.
It’s coffee time.
As soon as it is ready, let it cool and then add it to Marsala and two tablespoons of water. Now you can lay the Pavesini biscuits soaked in a baking dish, creating a layer.
On top of this layer, we put a good amount of mascarpone, on which we grate the dark chocolate.
We alternate a layer of biscuits, one of cream and one of chocolate chips.
When we are done, we can cover the spoon dessert with a sheet of cling film and put in the refrigerator to make it compact, leaving it at least three hours.
When it’s time to serve it, add bitter cocoa sprinkled on top.
